Determination of soluble fiber in foods

Fiber in food

Fiber is a component of plant-based foods that cannot be digested by the body. Fiber is divided into 2 types:

  • Insoluble fiber: A substance that does not dissolve with liquid when entering the intestinal tract. Sources of insoluble fiber such as shells of foods (wheat, brown rice, whole barley, some vegetables, tubers, fruits).
  • Soluble fiber: is a substance that can be dissolved in liquid into the intestinal tract in the form of a gel. This type is found in leafy vegetables, fruits with high viscosity (jute, spinach...) and some legumes (soybeans, beans).

The common types of soluble fiber in the food processing industry are Fructooligosaccharide, Galactooligosaccharide, Polydextrose... These types of soluble fiber are increasingly added in food (dairy, confectionery, functional foods...) because brings many health benefits, especially for babies and young children:

  • Limit constipation.
  • Strengthens intestinal microflora.
  • Supports the absorption of calcium and other minerals.

Eurofins Sac Ky Hai Dang has successfully developed a method to test the content of 2 main types of soluble fiber in food:

  • Fructo Oligosaccharide (FOS/ Inulin).
  • Galacto Oligosaccharide (GOS).

The method has been recognized by VILAS in 2022 and is ready to serve customers when needed.
