Updated FDA guidance on seafood product hazard control

In its June 2022 edition, the U.S. Food and Drug Administration (FDA) updated Chapter 9, “Environmental Chemical Contaminants Including Pesticides” in its Fish and Fishery Products Hazards and Controls.

The revisions to the guidance reflect FDA regulations for the safe and sanitary processing and import of fish and seafood products using Hazard Analysis and Critical Control Points (HACCP) measures. ).

This guide is intended to assist fish and seafood product processors in the development of HACCP plans. This guide is also intended to serve as a tool to be used by regulators in the evaluation of HACCP plans for fish and aquatic products.

Processors should note that each time the FDA makes changes to their guidance, processors should carefully re-evaluate the hazard analysis to see if the new recommendations provide action. more effective hazard control methods. Explanation of the regulatory approach to environmental contaminants in fish components used for other products for human consumption

Removed Table 9-1 (“Action level” and “Tolerance”), included as a reference in Appendix 5.G - 7 (June 2022 edition).

The following changes were made to “Determine whether a potential hazard is significant”:

  • Added description of "residual - residue"
  • Added a paragraph about common food processing operations and preparation techniques and their impact on the presence of veterinary drug residues in products.

The following changes have been made to the “Determining Critical Control Points” section:

  • Add a description of “farm-visits” by food processors to review farming conditions, land use, and pesticides
  • Additional explanation of supplier certification or letter of guarantee provided
  • “Third Party Farm Certification Program” has replaced “Quality Assurance Program”
